Choc Peanut Butter Cookies



½ cup wholemeal flour

¼ tsp baking soda

¼ cup chopped raw peanuts

1/3 cup peanut butter

1 egg

1 tsp vanilla extract

¼ cup maple syrup

150g dark chocolate block


  1. Preheat oven to 180°C (fan forced) and line a tray with baking paper
  2. Combine all dry ingredients (except chocolate) in a large mixing bowl
  3. Mix in the wet ingredients
  4. Use damp hands to roll tablespoon sized balls of batter onto the baking tray, ensure cookies are evenly spaced out
  5. Use a wet fork to lightly press down the balls into cookies
  6. Bake cookies for approximately 15 mins or until golden brown
  7. While cookies baking, melt dark chocolate over a bowl of boiling water
  8. Leave the cookies to cool completely then dip half of each cookie into the melted chocolate. Then using a fork, lightly flick chocolate over the top of the cookies
  9. Place cookies into fridge for chocolate to set
